Thoroughly mix the ground pork, soy sauce, olive oil and corn starch together and marinate for 15-30 minutes.
In a separate bowl, combine all the sauce ingredients. Mix well.
Heat 1 tbsp of olive oil on medium-high heat. Add the sliced ginger and minced garlic and cook for 30 seconds.
Add the ground pork into the same pan and cook until they are no longer pink. Set aside.
In a wok or pan, bring the sauce to a slight boil, then add the tofu and ground pork. Simmer for 1-2 minutes.
Mix 1 tbsp of corn starch with 1 tbsp of water and stir the mixture into the wok or pan.
Add 1 tsp of rice wine into the pan, stirring carefully to combine all ingredients.
Top the dish with scallions.
Serve over rice (or noodles) and enjoy!
