Soft Tofu with Ground Pork

Ingredients

FOR THE PORK

  • 10 oz ground pork
  • 1 tsp soy sauce
  • 1 tsp olive oil
  • 1 tsp corn starch

FOR THE SAUCE

  • 3/4 cup chicken stock
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1 tsp sesame oil
  • Dash of white pepper

REST OF THE DISH

  • 1 tbsp olive oil
  • 1 small knob of ginger sliced
  • 2 cloves garlic minced
  • 1 block soft tofu (about 16oz) halved & cut 1/2 inch thick
  • 1 tbsp corn starch
  • 1 tbsp water
  • 1 tsp rice wine
  • 1 scallion minced

Instructions

  • Thoroughly mix the ground pork, soy sauce, olive oil and corn starch together and marinate for 15-30 minutes.
  • In a separate bowl, combine all the sauce ingredients. Mix well.
  • Heat 1 tbsp of olive oil on medium-high heat. Add the sliced ginger and minced garlic and cook for 30 seconds.
  • Add the ground pork into the same pan and cook until they are no longer pink. Set aside.
  • In a wok or pan, bring the sauce to a slight boil, then add the tofu and ground pork. Simmer for 1-2 minutes.
  • Mix 1 tbsp of corn starch with 1 tbsp of water and stir the mixture into the wok or pan.
  • Add 1 tsp of rice wine into the pan, stirring carefully to combine all ingredients.
  • Top the dish with scallions.
  • Serve over rice (or noodles) and enjoy!
