Wash pumpkin and pat dry with paper towels.
Remove the seeds from the pumpkin (See Note 1).
Pour 1 cup of water into the Instant Pot.
Set a rack in the pot and place your cut pumpkin (or whole pumpkin if it fits) into the pot.
Close the lid and set the valve to sealing position.
Cook at high pressure for 15 minutes.
When time is up, set the valve to venting position for a quick pressure release.
Ensure the red floating valve is down before opening the lid.
Scoop out the pumpkin flesh into a bowl or colander and drain any excess liquid.
Blend in a blender or food processor until smooth. Enjoy!
