Place the chicken wings into a large bowl. Add rice wine and mix until the wings are coated with the wine. Allow to brine for 15 minutes.
While the chicken wings are brining, combine all the seasoning ingredients into a small bowl and set aside.
Remove wings from the rice wine and place them into a separate bowl, shaking off any excess wine from the wings.
Pour the seasoning onto the wings, ensuring that they are evenly distributed. Mix until thoroughly coated.
Preheat your air fryer for about 3 minutes, them remove the basket and coat with cooking oil spray.
Place the wings into the air fryer basket, avoiding any overcrowding or overlapping, then air fry for a total of 20 minutes, flipping midway. If the wings are not crispy enough after 20 minutes, air fry for another 3-5 minutes.
While the wings are cooking, make the sauce by combining all the sauce ingredients into a small pot. Stir until ingredients are well blended, then cook over medium low heat. When small bubbles start to form around the rim, turn the fire to low, then immediately add corn starch slurry and whisk until sauce thickens.
Pour the thickened sauce onto the air fried wings and toss until evenly coated. Top with optional chopped scallions and sesame seeds and enjoy!
