Ingredients

  • 1 cup basmati / jasmine rice washed and drained
  • 700-850 g leftover rotisserie chicken
  • 1 thumb ginger
  • 4 cups salted chicken broth
  • 3 cups water
  • 1 tbsp fish sauce
  • 1 tsp sesame oil

OPTIONAL TOPPINGS

  • chopped scallions
  • fried onions/shallots
  • white pepper powder

Instructions

  • Place washed basmati or jasmine rice into your Instant Pot, along with rotisserie chicken, ginger, chicken broth, water, fish sauce and sesame oil. Adjust ingredients according to taste.
  • Ensure the steam valve is in sealing position, then pressure cook using the "porridge" setting (25-30 minutes).
  • Allow the pressure to naturally release, then serve with desired toppings, such as chopped scallions, fried onions/shallots and white pepper powder. Enjoy!
