Three Cup Chicken (San Bei Ji - 三杯鷄) Recipe

This popular Taiwanese dish braises chicken in a delicious sauce and pairs very well with white rice. So easy to make, yet delicious!

Ingredients

FOR THE SAUCE

  • 3 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp sugar
  • 2 tbsp Shao Xing Wine

REST OF THE DISH

  • 2-3 tbsp sesame oil
  • 6 cloves sliced
  • 1 thumb ginger julienned
  • 2 lb chicken drumsticks cut with skin on and bone in
  • bunch of basil

Instructions

  • In a bowl, add all the sauce ingredients. Mix until well blended and set aside.
  • Heat 2-3 tbsp of sesame oil in a pan. Add the garlic and ginger and stir fry for about 15 seconds.
  • Add the chicken into the pan and sear until both sides are slightly brown.
  • Pour the sauce mixture into the pan.
  • Cover the pan with a lid and simmer on medium-low heat for about 15 minutes, flipping midway to ensure the sauce coats the chicken thoroughly.
  • Remove the lid and turn the heat up to medium or medium high. Continue to stir the chicken and allow the sauce to reduce and thicken (about 4-5 minutes).
  • Add the basil leaves and stir until wilted.
  • Serve with white rice and enjoy!
