I don’t eat Spam very often, but when I do, it brings me back to Hawaii, where they are known for Spam musubi!! I was about 5 months pregnant when Steve and I were there, which was a bummer because I couldn’t indulge in any sashimi or poke bowls. I even did a bit of self-controlling with Spam, since I wanted to avoid processed meat as much as possible while preggers. They DO come in really handy, however, when you’re running low on time and in a scurry to feed your kid. This is when Spam and Egg Macaroni Soup, a Hong Kong style breakfast, becomes my go-to breakfast! Put all 4 burners to use and you can have this breakfast ready in NO TIME!

Spam and Egg Macaroni Soup Recipe (午餐肉通粉)
Ingredients
- 3½ cups chicken broth
- 2 slices ginger
- 1 tsp sesame oil
- 1½ cups elbow macaroni
- ½ can of Spam
- 2 tsp cooking oil
- 3 eggs
- 1 scallion optional
- salt (or fish sauce) to taste optional
- white pepper powder optional
Instructions
BROTH
- Pour the chicken broth into a small pot and add the ginger slices. Bring to a boil, then add the sesame oil.
- Optional: add some salt or fish sauce, to taste.
ELBOW MACARONI
- Cook the elbow macaroni according to package instructions. Drain and set aside.
SPAM
- Slice the Spam, horizontally, into 1/4 inch thick pieces. Line the pieces up, then cut them into strips.
- Heat a pan and sear the Spam until both sides are slightly brown. See Note 1.
EGGS
- Heat the cooking oil on a nonstick pan, swirling to coat evenly.
- Carefully break the eggs onto the pan and allow them to fry, untouched, for a few minutes. See Note 2.
- Optional: top your eggs with some salt and/or pepper, to taste.
PLATING
- Separate the elbow macaroni into 3 bowls.
- Atop the macaroni with Spam.
- Add scallions (optional).
- Pour ⅓ of the hot broth into each bowl. Optional – add some white pepper powder, salt or fish sauce into your broth, to taste.
- Top each bowl off with an egg.
- Enjoy!!

Notes
- There is no need to sear the Spam in oil if you’re using a nonstick pan, but you may need to use a bit when using another cookware.
- If you prefer your eggs less runny, place a lid on the pan to steam the eggs until they are cooked to your liking. You may choose to cook your eggs however you’d like, but we prefer them sunny-side up.
