Fall has officially arrived, which means it is pumpkin season! Who else eagerly anticipates the launch of pumpkin spice lattes? I know I do! š
A family friend recently gave us a homegrown pumpkin (I believe it is an Italian stripe, but I can be wrong). It weighed over 8 lbs and was literally bigger than my head! This beautiful pumpkin was sitting on my counter top for a couple of days, until I finally decided to puree the entire thing for use in some pumpkin recipes. How to Make Pumpkin Puree
Equipment
- Instant Pot
- Blender or food processor
Instructions
- Wash pumpkin and pat dry with paper towels.
- Remove the seeds from the pumpkin (See Note 1).
- Pour 1 cup of water into the Instant Pot.
- Set a rack in the pot and place your cut pumpkin (or whole pumpkin if it fits) into the pot.
- Close the lid and set the valve to sealing position.
- Cook at high pressure for 15 minutes.
- When time is up, set the valve to venting position for a quick pressure release.
- Ensure the red floating valve is down before opening the lid.
- Scoop out the pumpkin flesh into a bowl or colander and drain any excess liquid.
- Blend in a blender or food processor until smooth. Enjoy!

Notes
- If you are using a large pumpkin, cut the pumpkin in half, then remove the seeds. If you are using a smaller pumpkin that can fit in the Instant Pot without cutting, cut a circle around the stem of the pumpkin and scoop out the seeds.
