I’m grateful to be home, cooking 3 meals a day for my family during this COVID-19 quarantine. However, when my full-time job keeps me extremely occupied, leaving me just 10-15 minutes to prepare a meal, I revert to shortcuts to allow myself a little room to breathe. Sliced bread comes in pretty handy for meals that you can make in a matter of minutes (ie: grilled cheese or PB&J), but so do tortillas! Here are 3 ways I’ve used tortillas to assemble quick meals for Steve and my little one.
1: Breakfast Quesadillas
With just a few ingredients, you can turn a plain tortilla into a cheesy breakfast quesadilla. Sexy it up by adding some seasoning, bell peppers or onions if you wish!
2: Smoked Salmon and Spinach Pinwheels
These make a great party appetizer or quick bite for those who are obsessed with lox and cream cheese like I am! All you need are tortillas, cream cheese (I prefer Philadelphia’s whipped cream cheese with chives for these pinwheels), smoked salmon and fresh spinach.
3: Toasterdillas
This tortilla hack appears to have taken TikTok by storm, tempting me to try it out for myself. I must say, it works pretty darn well! Most importantly, all you need is a toaster! My LO eats an entire “toasterdilla” in one sitting and there’s less clean up for momma!
