Soak snow fungus in room temperature water until rehydrated. Alternatively, soak in hot water for 10-15 minutes until softened. Carefully remove the hard centers with a scissor.
Place snow fungus, pitted red dates, lotus seeds, Asian pear pieces, water and sugar into Instant Pot/pressure cooker and pressure cook for 15 minutes. Please ensure the valve is in sealing position.
Allow the pressure to naturally release.
Remove the lid, then add goji berries and stir briefly.
Taste the dessert soup and adjust sweetness level according to preferences.
Serve hot immediately, or allow to cool down before refrigerating! The dessert soup is refreshing when enjoyed cold!
