Looking for a gently sweet, nourishing and simple recipe for Chinese dessert soup or “tong sui?” Search no further! Here’s an easy, “set it and forget it” recipe for Snow Fungus Dessert Soup or “Suet Yi Tong Sui.” This Instant Pot version saves time without sacrificing flavor or texture!

What is Snow Fungus?
Snow fungus, scientifically known as tremella fuciformis, or suet yi (雪耳) in Cantonese, is a species of fungus that possesses white fruiting bodies and a gelatinous texture. Cultivated in China, it is often used in sweets and dessert soups due to its medicinal benefits and interesting jelly-like yet slightly crunchy texture. It is believed to boost overall immunity and assist with collagen production and skin hydration, which explains why it is prized in Chinese cuisine and popular among women!

Ingredients You’ll Need
- dried snow fungus, soaked, rehydrated with centers removed
- red dates/jujubes, pitted
- goji berries
- rock sugar or white sugar (adjusted to taste)
- lotus seeds
- Asian pear
- water
Tips for Success
- It is necessary to soak the snow fungus until it softens prior to use. They expand, so don’t use too much!
- I prefer rock sugar in this dessert, but you can use white or brown sugar as well. Adjust sweetness levels after cooking to suit your taste preferences.
- Store leftovers in the fridge for up to 3–4 days. It thickens over time and serves as a refreshing summer treat!

Snow Fungus Dessert Soup (Instant Pot/Pressure Cooker) 雪耳糖水
Equipment
- 1 Pressure cooker or Instant Pot see product links below!
Ingredients
- 30 g snow fungus
- 12 medium red dates pitted and halved
- 20 lotus seeds rinsed
- 1 Asian pear peeled and cut into bite-sized pieces
- 8 cups water
- 2-3 tbsp white sugar or rock sugar, to taste
- 2 tbsp goji berries
Instructions
- Soak snow fungus in room temperature water until rehydrated. Alternatively, soak in hot water for 10-15 minutes until softened. Carefully remove the hard centers with a scissor.
- Place snow fungus, pitted red dates, lotus seeds, Asian pear pieces, water and sugar into Instant Pot/pressure cooker and pressure cook for 15 minutes. Please ensure the valve is in sealing position.
- Allow the pressure to naturally release.
- Remove the lid, then add goji berries and stir briefly.
- Taste the dessert soup and adjust sweetness level according to preferences.
- Serve hot immediately, or allow to cool down before refrigerating! The dessert soup is refreshing when enjoyed cold!
