As I’ve mentioned in prior posts, I was born and raised in Lower Manhattan, just a couple of blocks away from Chinatown. I was spoiled by all the good Asian food that were easily accessible and literally a few steps away from home. My sister and I often shopped at Soho, which was a short walk from Chinese restaurants that sold EVERYTHING from congee, wonton noodle soup and roast meats over rice. We often ordered the latter, ie: char siu over rice, soy sauce chicken over rice or a combo of roast meats over rice (or noodles). My sister requests for extra ginger scallion sauce with her dish each and every time because this sauce enhances flavors on practically all Chinese dishes! Believe it or not, you can make this sauce at home with just 4 ingredients!

Ginger Scallion Sauce Recipe (姜葱)
Ingredients
- 3 stalks scallion (green onions) – about 1.5 oz
- 1 large thumb ginger – about .75oz
- ½ tsp salt or to taste
- ⅓ cup neutral tasting oil
Instructions
- Finely chop the scallions and finely mince the ginger.
- Transfer them into a heat proof bowl and top with salt.
- Heat oil, then pour directly into the bowl containing the chopped scallions, ginger and salt.
- Blend ingredients together thoroughly and adjust according to taste. Enjoy with Hainanese Chicken, White Cut Chicken and/or rice!
