Yes, leftover rotisserie chicken (and turkey from Thanksgiving) make great sandwiches, but try using it to make a pot of heart-warming and comforting chicken congee for breakfast! Simplify the process with your Instant Pot, and you have an effortless batch of delicious porridge for the family!

Instant Pot (Leftover) Rotisserie Chicken Congee
Equipment
- Instant Pot / Pressure Cooker
Ingredients
- 1 cup basmati / jasmine rice washed and drained
- 700-850 g leftover rotisserie chicken
- 1 thumb ginger
- 4 cups salted chicken broth
- 3 cups water
- 1 tbsp fish sauce
- 1 tsp sesame oil
OPTIONAL TOPPINGS
- chopped scallions
- fried onions/shallots
- white pepper powder
Instructions
- Place washed basmati or jasmine rice into your Instant Pot, along with rotisserie chicken, ginger, chicken broth, water, fish sauce and sesame oil. Adjust ingredients according to taste.
- Ensure the steam valve is in sealing position, then pressure cook using the "porridge" setting (25-30 minutes).
- Allow the pressure to naturally release, then serve with desired toppings, such as chopped scallions, fried onions/shallots and white pepper powder. Enjoy!
