Summer is approaching and warm weather calls for some refreshing, iced drinks! If you’re a HUGE and I mean HUGE, HUGE fan of taro root like myself, you will enjoy this lightly sweetened Taro Ube Smoothie. Taro creates a creamy consistency and the ube gives this beverage a beautiful purplish hue. Feel free to blend it with your milk of choice! I used almond milk but can see it going well with regular and/or coconut milk! Check out my recipe and Youtube tutorial below. Taro Ube Smoothie Recipe
Ingredients
- 4 oz cooked taro root (see note below)
- 1 oz cooked ube (purple yam) (see note below)
- 2 tbsp sweetened condensed milk or to taste
- 1 cup milk of choice
- 1 cup ice
- 1 tbsp honey (optional) or to taste, for extra sweetness
Instructions
- Place the cooked taro, cooked ube, sweetened condensed milk and milk (and optional honey) in a blender.
- Blend until smooth.
- Pour the smoothie into a cup of ice and enjoy!
